Love the way the light sear of the salmon brings out the fat and makes it even richer than it is already. This sauce I was inspired by a dish I had a Morimoto’s in Philly a few years back. Pretty easy preparation once you have made the miso sauce which can be used for many applications as it’s also a great salad dressing.

Ingredients

  • 1/2 cup Good super fresh salmon filet
  • Ponzu sauce
  • Broccoli sprouts

Miso Sauce:

  • 1/3 cup rice vinegar
  • 2 tablespoons white or yellow miso
  • 2 large garlic cloves, peeled
  • 1 tablespoon sugar
  • 2 teaspoons chopped fresh ginger
  • 1/2 cup olive oil Combine all ingredients in a food processor and blend until smooth

Directions

Miso Sauce: Combine all ingredients in a food processor and blend until smooth.

Take the salmon filet and trim it. Now with a blow torch sear the outside until it just changes color.
Now cut into thin filets as in the photo.

Arrange on a plate and add some greens now spoon a little of the miso dressing around the plate followed by a splash of the ponzu sauce. That’s is ezzee peezzee japaneezeee…….or something like that…enjoy!
