Here is an easy recipe that will get everyone standing at attention when they put that first bite in their mouth. Salmon Rillettes I believe started with pork and Thomas Keller brought it our attention with his version with salmon at Bouchon. This one is just fantastic as a starter with some good wine and a date of the opposite sex as this one is sexy, luscious and lip smacking awesome. This one you can also freeze for up to 2 month so make plenty and have it on hand for those special times when you want to BLOW someone away.

Ingredients

  • 8 oz fresh salmon
  • 4 oz smoked salmon
  • 1/3 cup chives finely chopped
  • 8 tablespoons unsalted butter plus additional 4 tablespoon for melting and sealing the salmon rillettes
  • 4 tablespoons olive oil
  • Juice of one lemon
  • ½ teaspoon of smoked paprika
  • Bruschetta points

Directions

Start with the salmon filet you want to steam this for about 8 min then put it into an ice bath to chill it and stop the cooking, set this aside. Now in a bowl combine the chives, butter, olive oil, lemon juice and smoke paprika and mix well. Now flake the salmon and smoked salmon into the bowl and begin mixing to break it down until you have rough but smooth pieces of the fish in the mixture.

Taste for seasoning and adjust, some people want more lemon, more smokiness etc. Now traditionally this will be put into a jar but I used ramekins so fill one up, clean the edge and now take some melted butter and pour on top to make a seal. Chill in the fridge for at least an hour or better more.

To serve plate with some toast point or bruschetta, remove the butter seal and smear on the toast points and go crazy!
