Roast Leg Of Lamb with Roast Veg and Mint Chimichurri
Carrots, Corn, Garlic, Onions, Thyme, Mint all make for the perfect bed for Roast Leg Of Lamb. All Veg on a sheet pan with lots of olive oil salt and pepper. Roast 400 degrees until caramelized.
Mix fresh mint, garlic, olive oil and vinegar and Chimichurri to serve on the lamb.
