Little parcels of shrimp love! I first had these growing up and throughout the years have tried different versions from the street vendors in Hong Kong/ Thailand to fine dining restaurant and this is about my favorite shrimp paste to toast ratio. I also like to eat these with bulldog sauce for a little sweet flavor and hot sauce. These are perfect for parties and keep well at room temp. A little shrimp will go a long way in this recipe.

Shrimp Toast

Ingredients

  • One dozen medium cleaned raw shrimp
  • Knob of ginger chopped
  • 3 clove of garlic chopped
  • One egg
  • 2 teaspoons corn starch
  • Table spoon Jack Daniels
  • Tablespoon rice wine vinegar
  • 2 scallion chopped
  • Pinch of salt

Other ingredients:

  • White bread of some sort I used little brioche buns
  • Canola oil for frying

Directions

Combine all ingredients into a food processor and pulse until everything is combined and a smooth paste.
Now cut your bread to any size you prefer I did mine into 1 ½ inch squares and pretty thin.
Take a tablespoon and put a nice even layer of the paste into the bread as you can see in the photo. Now repeat until you have all your little soldiers ready to go.

Now in 350 degree oil start by frying them shrimp side down first for about a min or so then turn over finish until you see the bread turning golden brown about another min. Remove and let cool and drain for a few min.

I like a little bulldog sauce on mine but you can eat them plain, with hot sauce or sweet chili sauce all good.
