Frittata is the Italian word for omelet. Frittatas are prepared differently than omelets, usually started on the stovetop and finished under the broiler or hot oven. The result is an egg dish that is firm, and nicely brown on the top and edges. These are great dishes to highlight fresh, seasonal ingredients or a perfect way to utilize leftovers. Here is a recipe I love to make because it is delicious, pretty healthy and can be kept hanging around at room temp all day for snacking. This is meant to be eaten like good focaccia at room temp. Make this one up and leave it on the counter and it will be your snacking friend all day.

Ingredients

  • 6 eggs
  • 1 1/2 cups milk
  • 2 cups Blanched broccoli rabe
  • Thin sliced parma ham
  • 1 cup grate parmesan cheese
  • 2 cups grated sharp cheese like aged cheddar

Directions

Start by whisking the eggs milk and parmesan cheese together.
Now in a hot pan with olive oil add the broccoli rabe and sauté for a few min, now add a layer of the parma ham on top making sure the broccoli rabe is cover the entire bottom of the pan.

Now pour in the egg mixture and evenly coat the top with the sharp cheese. Let cook in the pan until you start to see the edges start to be a little crusty.

Now put into a preheated oven at 400 degrees and cook until the cheese is nice and brown on top.
Take out and slide the frittata onto a wire rack if you can and let it cool to room temp.
That’s it cut yourself a wedge have it with salad is nice or perfect for if you are in the run you can wrap it like a sandwich and take it with you.

Remember you can use whatever you have in your fridge there are no rules so get creative.
