Ingredients
- 8 oz Salmon Filet skin off
- 2 heads of bay bok choy chopped roughly
Directions
Start by making the sauce by combining all the ingredients whisking them together and setting aside. Now take your salmon and paint some of the marinade on it and let it sit at room temp for a few min. Now preheat your oven to 375 degrees and put some olive oil in the bottom of the pan. put the salmon in and let roast for about 15 min until its fully cooked (I like mine medium so I let it go a little less) take out and let rest. in the same pan put it on the stove around medium high heat. Put some more olive oil in the pan and when it starts to smoke take your chopped baby bok choy and stir fry it until it starts to get a little wilted. Now add a few tablespoons of the sauce and toss in 3 prawns or shrimp and toss around for a min. until everything is heated through.
Plate by starting with the baby bok chow, place the salmon on top and the prawns/shrimp around and drizzle some of the marinade around the plate. You can garnish with some sesame seeds but that should do it more healthy fun in the kitchen!
