Ingredients
- 1/2 pound fresh smelts or any other small fish you can fry guts bones and all
- one cup flour
- kosher salt and fresh pepper
- hot sauce of your choice
- fresh lemon
- olive oil for frying
Directions
Take your fishies and dredge them in the seasoned flour (combine the flour, kosher salt and pepper together) and fry them in olive oil at 375 degrees for about one min. Do the audible test, as soon as you put them in the oil it will sound like a crowd of people cheering for you, once it dies down they are ready. Take them out and drain on a paper towel and season with lemon or your favorite hot sauce.
