Looking for something a little Moorish and different for breakfast, well here is the perfect one item breakfast tart great for yourself or make it in a baking sheet for a room full of your friends who were to soused to make it home the night before. I’m showing you what I put on mine this morning but you can use any combination that you want, add some cooked pancetta, fresh basil…..its endless.

Ingredients

  • Puff Pastry
  • One fresh tomato
  • Chopped garlic
  • 1 cup sliced mushrooms
  • Chili flakes
  • Olive oil
  • Butter
  • Kosher salt
  • Some sharp cheese
  • 5-7 quail eggs

Directions

Saute the mushroom with olive oil, salt and a knob of butter until they have some nice color. Add some chili flakes at the end for heat.
Chopped the tomato put in a bowl with some chopped garlic and olive oil. Let sit for 15 min to meld flavors

Now roll out the puff pastry until it is very thin about 1/16 of an inch. Now prick it with a fork to stop it from rising during cooking.
Put a little lip around to make a little crust and to stop the ingredients from running away. Now put the tomato down, followed by the mushrooms.

Make little pockets and add some quail eggs, I would crack them into a cup first in case there is some shell to take out or a yolk breaks. Now great some Manchego cheese and bake at 400 degrees until the edges become nice and golden.

That’s it! Takes about 20 min to make and you can leave it out to snack on all day.
