FOOD PORN RECIPE! Chicken Under a Brick
Recipe:
half a chicken, breast bone removed
olive oil
knob of butter
juice of half a lemon
splash of white wine
tablespoon capers
Method:
Season chicken and into a hot pan with olive oil and either using a metal sandwich weight like i did or a brick wrapped in foil lay it on the chicken to compress it. Cook for about 10 -15 min on one side until the skin is nice and crispy turn over and into a 375 degree oven for another 10-12 min (all depending on the size of the bird).
Take out let rest, add your butter, wine, capers and lemon juice to the pan to deglaze, back on the heat and reduce until you have a nice pan sauce, check for seasoning, plate and enjoy!
