Here is a healthy well less not healthy version of an Egg Mcmuffin. I use my own chicken sausage and yes you have to make it with American Cheese. It's is easy to do and delicious.

Ingredients

  • Homemade chicken sausage
  • Low carb low calorie sandwhich rounds
  • Organic eggs
  • Good American cheese
  • Honey

Chicken Sausage:

  • 2 pound ground chicken
  • 2 tablespoons kosher salt
  • 6 finely chopped garlic cloves
  • Tablespoon of crushed dried chilies
  • 2 teaspoon of fennel powder (you can use any other herb you like)
  • 1 cup of good dry red wine
  • Teaspoon fresh cracked pepper

Directions

Make the sausage by combining all the ingredients and mixing well. Let it sit for an hour in the fridge for the flavors to develop.

Make the sausage patties the same size at the sandwich rounds (warm the breakfast rounds in a 250 oven) .

I am lucky I have little pans that are the same size as the sandwich rounds, cook the sausage and set aside.
Now lightly beat the egg and in the same fat in the pans cook the egg, after you flip it add a slice of American cheese to melt.

To assemble start with the sausage on the bottom round and add a little honey to the sausage, now the egg and cheese and the top bun, that’s it!
