That's right the taste of a chicken club in a dumpling and takes no time to make. I always keep some good quality won ton skins in the freezer for anytime I am in the dumpling mood.

Ingredients

  • one chicken breast boneless skinless
  • 1/2 cup grated sharp cheddar cheese
  • 3 strips of bacon
  • one egg
  • won ton skins pay extra dollar get good quality

Chive Pesto

  • handful of chives
  • 1/2 garlic clove
  • vegatable oil
  • pinch of salt

Spicy Sauce

  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • teaspoon Sambal Olek or Saracha sauce
  • few drops sesame chili oil.

Directions

Make the chicken filling, put the chicken breast, bacon, cheese and egg into a food processor and blitz until it is a paste. Take a won ton wrapper and put about a teaspoon in the middle and push up the sides like in my photo. Make as many as you  like you can freeze the filling or make the dumplings put on a cookie tray into the freezer then transfer to a freezer bag when frozen so you have them ready made anytime you get a craving. Also great for those guests that drop in. Into a oiled bamboo steamer for 10 min (spay the bottom with oil), while they are cooking make the garnish.

Spicy sauce, mix all ingredients together

Chive Pesto: put the garlic, chives, salt and enough oil to cover it up. Use a mortar and pestle to turn it into a pesto you will bash it for a good min or two.

To plate add a dollop of the chive pesto to the top of each dumpling and either spoon the spicy sauce around the bottom of serve into a bowl.
