Almost a soufflé but not quite. This is a fantastic light dish perfect for a lunch or late night snack super easy kids.

Ingredients

  • 1 ½ cup firm ricotta
  • 2 large eggs separated
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons grated parmesan cheese
  • Flour and butter for ramekins
  • Kosher salt

Directions

Start by separating the eggs and place the yolk, ricotta basil and parmesan in a food processor and blend until smooth check for seasoning.
Beat the egg whites until they are a nice stiff peak and fold in the ricotta mixture.

Now divide the mixture between 2-4 buttered and floured ramekins and top with a sharp cheese of your choice.
Bake at 375 degree until risen and golden brown.
Let cool and turn out onto a plate.

Serve with a nice peppery salad or some nice steamed vegetables for a light meal.
