While working on my chocolate tart I realized I had not eating for many hours and was looking for something moorish that would go good with a hockey game in the back ground. So I remember having some chicken karaage once at Morimoto’s and it was served with a type of sweet chili sauce so I did my own version. The one method I used on the little chicken drumettes was to cut the tendon on the bottom and pushing up the meat so you had this perfect chicken lollipop. These are great for large groups of people you can make a nice plate of them and they are good at room temperature. Here we go!

Ingredients

  • 12 Chicken drumettes
  • ½ cup honey
  • One crushed garlic clove
  • Dried chili flakes
  • Fresh chili
  • Teaspoon fresh grated ginger
  • Sesame seeds
  • Sesame Chili Oil
  • Spring Onion

Directions

Cut the tendon at the bottom of all the drumettes and scrap the bone clean and remove excess fat from the bottom of the drumettes.

Now fry them no seasoning in canola oil for 11 min.
In a sauce pan on low heat combine the honey, crushed garlic, chili oil, dried chili flakes and fresh grated ginger and simmer together for 10 min then take off the heat.

When the chicken is done drain for a few min then plate in a tight bowls or present on a plate.
Drizzle the sweet chili sauce on and garnish with the chopped spring onions and sesame seeds.

Delicious and very easy. You can double or triple the sweet chili sauce recipe so you have some for a later use.
