Benny’s Ultimate Fish and??? That’s right folks…its fish and WTF? I have fooled a lot of people into thinking this dish is fish and fish but it's really fish and tofu! That’s right good old firm tofu and 95 percent of the people think it’s a kind of delicate fish because of the way I season it. The texture is that of a turbot or similar fish. The secret is in the tempura batter which I heavily seasoned with smoked paprika. Follow along and you will find this to be just amazing crunch, flavor and eye candy. Let’s go!

Ingredients

  • Lemon Sole
  • Tempura mix
  • Cold water
  • Smoked paprika
  • Kosher salt
  • Firm tofu
  • Leeks
  • Malt vinegar
  • Canola oil for frying

Directions

Prepare the tempura batter according to the package and add one tablespoon of smoked paprika. Batter should be runny but not thin. Don’t over mix or you will make it gummy.

Now take your fish and your tofu and cut them into squares and into equal sizes. Now gently put into the batter shake off the excess and place in 350 degree fryer. This will take about 5 to 8 min depending on the fryer and batter. Take it out when it’s a nice golden brown, season with salt and drain on paper towel.

Place in a 250 degree over to keep it warm and crisp. Now clean and slice leaks to look like mini onion rings and drop them in the batter and fry them off. These will take about one min. Drain on paper towel and it’s time to plate.

Here is where the fun is, put one piece of the fish and one piece of the tofu on the plate and scatter the leeks on top.

Serve with your favorite malt vinegar on the side. Now watch as people eat this, unless they have a chef’s palate they will most likely eat the tofu and think it’s a really nice mild fish. I cut the two pieces in the photo so you can see that the fish is the thicker piece and the tofu the thinner. I would usual cut them the same size but you really can’t tell which is which sometime and if your mates have had a few beverages they for sure won’t know PLACE YOUR BETS!
