Deconstructed Eggplant Parmesan

Ingredients

  • Eggplant
  • Bread crumbs
  • Panko breadcrumbs
  • Canola oil
  • Tomato sauce
  • ½ Ricotta cheese
  • ¼ cup toasted Pine nuts
  • ¼ cup Chopped Fresh basil
  • Lemon zest
  • ¼ cup Shredded cooked chicken breast

Directions

Take a large eggplant and cut three thin circles, then cut out some French Fry pieces.
Now egg wash the circles in and use Panko to coat them and fry at 375 degrees. Now do the same for the French Fry eggplant pieces but use regular breadcrumbs and fry at 375 degrees until golden brown about 1 – 1 ½ min. You can put all the fried eggplant in a 220 degree oven to stay warm and crisp until you are ready to assemble.

Combine the ricotta, toasted pine nuts, basil and lemon zest and mix together.

To assemble put one eggplant disk on a plate, put a little ricotta and some chicken, put a second eggplant disk and put some more chicken and ricotta and top with the tomato sauce.
Plate the eggplant fries and add a little garnish and you are ready to eat the best deconstructed eggplant parmesan ever!
