Got some chicken hanging around and think.....hmmm tossing this into the neighbors lawn will be much more fun than baking it again...well folks look no further a quick and amazing way of taking your chicken to a flavor palace in a matter of minutes. The key is the cooking method and the finishing sauce. I would marinade this for a week sometimes but this one you can bang out right away and the sauce and the end will bring it all together. Benny

Ingredients

  • chicken legs, quarters any cut you like
  • unsalted butter
  • splash of white wine

Lemon Marinade

  • juice of 2 lemons
  • 1/2 cup olive oil
  • 1 teaspoon kosher salt
  • 3 gloves crushed galic
  • zest of the lemons

Directions

Start by making your marinade and this should be good for one chicken  up maybe 3 pounds max. Whisk the lemon zest, garlic, olive oil,  lemon juice and kosher salt together and pour over the chicken and make sure the chicken is spread out so one side can absorb the marinade. If you want to marinade this for a few days make sure you triple or more the recipe so the chicken is completely covered in  the marinade.

Preheat your oven to 375 degrees and get a hot pan olive oil and season the chicken on the skin side and place it in the pan and put some weight on it as you can see in my photo. Leave it alone for at least ten min. When its ready it will come away from the pan. Turn it over and put it in the 375 degree oven for about 15 min until the juices are running clear. Take out and let rest, now put the pan back on the burner and add a little water and splash of white wine and a pat of unsalted butter if you have it and let it reduce until its just starting to get a little thick and glossy. Plate the chicken and pour this sauce over it and serve..that’s it! This will rock your friends and you I promise.
