Here is a quick and easy way to use up some of that leftover BBQ chicken from the weekend. This actually is pretty close to the flavor of the California Pizza Kitchen's BBQ Pizza.

This wont take you long at all if you have a few ingredients on hand like simple tomato sauce and either flat bread or flour tortillas.

Ingredients

  • 2 large four tortillas or flat bread
  • simple tomato sauce tomato, olive oil garlic basil or just tomatos crushed will work fine.
  • fresh mozzarella cheese
  • leftover BBQ chicken
  • kosher salt
  • add any ingrediants you desire. I added a couple hot peppers
  • Fresh Cilantro

Directions

Preheat your oven to 450 degrees. Important you have it at this heat. Now cut up your leftover BBQ chicken into small chunks.

Start with a little more than a tablespoon of tomato sauce and spread it evenly over the tortilla, don’t use to much just enough to cover it like in my pictures (#1 mistake people make with homemade pizza to much sauce.). A nice layer the bbq chicken followed by a little mozzarella cheese (don’t over cheese either!)

Put the pizza on a pan or cookie sheet and into your 450 degree oven for about ten min or until there is a little char on the crust and the cheese is bubbling and getting a little brown.

Now take off the pan and directly onto the oven grate for about 90 seconds to really get the bottom crispy. Take out let rest for a min then slice and finish with a few grains or kosher salt and some fresh cilantro and that’s it!
