Ingredients
- 16 oz or so of your favorite salmon filets
- kosher salt and pepper
- Vegatable oil
Pineapple Mango Salsa
- one small mango diced
- one pineapple spear diced
- one shallot finely chopped
- handful of cilantro chopped
- kernals from one BBQ corn on the cobb
- juice of one lime
- kosher salt to taste
- 2 tablespoons of vegetable oil
- one chilie finely chopped
Lemon Vinaigrette
- one part lemon juice to 2 parts olive oil season with salt and a little water mix well and set aside.
Directions
Start by making the salsa, just combine all the ingredients into a bowl, mix well and sit in the fridge until ready to serve or overnight.
Brush your salmon with vegetable oil, season with kosher salt and pepper. Now on a oiled hot grill flesh side down grill until it come loose on its own. Turn over, check for doneness should take about 3 more min on the 2nd side.
To finish put the salmon on the plate, add some of the salsa and finish with some lemon vinaigrette.
Simple, healthy and delicious.
