Simple way to kick up a great piece of salmon. You can use this salsa with any cut of salmon or any fish that you grill. This is a perfect summer lunch as it has the flavors of summer and is pretty much carb free.

Ingredients

  • 16 oz or so of your favorite salmon filets
  • kosher salt and pepper
  • Vegatable oil

Pineapple Mango Salsa

  • one small mango diced
  • one pineapple spear diced
  • one shallot finely chopped
  • handful of cilantro chopped
  • kernals from one BBQ corn on the cobb
  • juice of one lime
  • kosher salt to taste
  • 2 tablespoons of vegetable oil
  • one chilie finely chopped

Lemon Vinaigrette

  • one part lemon juice to 2 parts olive oil season with salt and a little water mix well and set aside.

Directions

Start by making the salsa, just combine all the ingredients into a bowl, mix well and sit in the fridge until ready to serve or overnight.

Brush your salmon with vegetable oil, season with kosher salt and pepper. Now on a oiled hot grill flesh side down grill until it come loose on its own. Turn over, check for doneness should take about 3 more min on the 2nd side.

To finish put the salmon on the plate, add some of the salsa and finish with some lemon vinaigrette.

Simple, healthy and delicious.
