Ingredients
- Lemon Sole Filet or any other firm white fish
- crusty bread
- sprouts
- fresh lemon
Spicy Lemon Sole Sauce
- 1/2 cup mayo
- tablespoon Saracha Sauce
- 1/4 teaspoon powdered dried chilis
Lemon Aioli
- juice of one lemon
- 1/4 cup japanese mayo
- Panko Bread Crumbs
Directions
Make the Aiolo: put juice of one lemon in small pot on medium heat and reduce until it is a syrup. Cool and combine with mayo and set aside.
Trim the sole filet to match the size of the bread and take the trimmings and chop them up and combine with equal amounts of the spicy sauce (just combine all ingredients to make the spicy sauce) and mix well.
Take the filet and layer the trimmings with the spicy sauce on top evenly covering the entire surface. Sprinkle some of the powdered chili flakes on and some panko bread crumbs. Now into a hot pan with olive oil and sear the one side for a min then into a 400 degree oven until the top is browned about 7 min. Add the piece of bread as well to toast it up.
Assemble, spread a nice layer of the lemon aiolo on the toasted bread, lay the sole on top and put a nice amount of sprouts on top.
Thats it easy stuff and really awesome, kinda of like a kicked up fish sandwich.
