MY favorite fish market is The Lobster Place in Chelsea Market in New York . Amazing market not only can you get some of most amazing foods in the world but you can get your recording mastered at Sterling Sound and visit the Food Network. My fish monger at The Lobster Place will give me a call and let me know when they have some amazing tuna belly and put some aside for me. I was leaving from the market and I run into Mr. Morimoto! I introduce myself and tell him I have been watching him from the early days on Iron Chef Japan. He asked what I just bought and I told him some amazing Yellow Fin Tuna belly. He asked what I was going to do with it. I told him I would figure that out when I got it on the cutting board. He then offered one of his takes on it which I was honored and gladly took his advice so this is the end result.

Ingredients

  • Yellow Fin Tuna
  • ½ cup Homemade or Japanese mayo
  • Tablespoon of chili sesame oil
  • Teaspoon of chili sauce
  • Won Ton wrappers

Directions

I made Won Ton wrappers cut them into strips and fried them at 350 degrees and used them as a crunch on the tuna.

I made a spicy mayo sauce and added a dab.
