Ever sit down for a meal in a really good restaurant and get a dish that made you say….almost… almost this is what I wanted in terms of flavor. I had that experience lately so I went home and did my own version of a standard but I added the flavors I wanted and I also didn’t get cheap on the shrimp.

Ingredients

  • Dried Angel Hair Pasta
  • 1 cup Fresh tomato’s
  • Tablespoon capers in salt
  • ½ cup fresh basil
  • 1 clove of garlic minced
  • Good olive oil
  • Kosher salt
  • 3 large peeled and deveined prawns either sautéed in butter or bbq like I did.
  • Parmesano reggiano cheese to finish

Directions

In a hot pan add a good ¼ cup of olive oil.
Now chop up one large tomato taking the stem out and add to the hot oil. Add the garlic and sauté for until the tomato starts to break down.

Now cook some angel hair pasta according to the manufactures directions and minus a min take out and drain. It should still be a little to the tooth with a bit of a bite to it.

Now add the capers and fresh basil and some kosher salt. Now add the pasta and toss for a good minute until everything is nicely incorporated.

Plate and add the shrimps or prawns around the pasta and finish with some olive oil and shaved Parmesano reggiano cheese.
