This one is inspired from a dinner at Nobu in New York. I found some amazing Black Cod at the Lobster Place in Chelsea Market and was looking for a way to lift up the usual miso glaze and here is what I came up with. Now one method that I use a lot is to caramelize the outside with a blow torch. This allows me to cook the fish until it’s just done, moist and tender then giving the outside that amazing burnt miso glaze without torturing the fish is a high heat oven just to get that caramelized outside. Enjoy, this is luscious and elegant, makes a great a starter.

Ingredients

  • 1/3 cup yellow miso (fermented soybean paste)*
  • 2 tablespoons orange juice
  • 2 teaspoons soy sauce
  • 1 teaspoon dark brown sugar
  • 1 teaspoon grated orange peel
  • 6 1 ½ oz Black Cod cut on a bias about ¼ inch thin

Directions

Whisk first 6 ingredients in small bowl.

Preheat oven to 325 . Line baking sheet with aluminum foil. Place fish on foil, skin side down. Spread miso mixture over fish. Cook fish for about 3 minutes. Remove fish and lightly coat again with the miso glaze. Now take your Brule torch and carefully torch the fish until the miso starts to bubble and turn a golden dark color. Plate, add one stem of chive and a few dots of the miso for presentation and a little extra flavor if desired.
