Ingredients

  • One dozen chicken wings tips discarded and winglet and drumstick separated. Now to make it a little more fancy cut the tendon on the bottom of the drumstick part and clean the bottom like in my photo to give you a chicken lolly.
  • Juice of 5 oranges ,regular orange juice will work fine too about one cup worth
  • Juice of 2 limes
  • Shot of silver tequila
  • Kosher salt
  • Tablespoon brown sugar
  • Tablespoon honey
  • 2 tablespoons saracha sauce
  • 5 gloves of garlic finely chopped
  • Chopped cilantro

Directions

Start by marinating the chicken in the tequila, brown sugar, pinch of salt and juice of one lime for at least 20 min if not overnight.

Now either on your hot bbq or broiler cook the chicken until you get a good char on them don’t worry if they are not done cooking inside we will finish cooking them later.

Now in a oven proof pan add some canola oil on the bottom of the pan, add the orange juice, juice of one lime, saracha, garlic and honey. Add the chicken and put into a 375 degree oven and cool until the juice has reduced to a thick syrup and is coating the chicken and becoming one with the chicken. Make sure to toss the chicken every 10 min or so during the cooking.

To plate drizzle any sauce over the chicken and finish with some chopped cilantro.

Make a bucket load of these they will go fast!
