Here is my version which should be close to any good Korean version of these amazing ribs. Koreans and Japanese cut them very thin as you can see and they are just amazing with the right marinade which is a classic Korean bbq one I made. The key is to let me marinade for up to 3 days and cook them on a HOT grill until they are caramelized. You can make boat load of these for parties and they go fast!

Ingredients

  • 2 pounds Korean short ribs beef

Marinade:

  • 1 cup brown sugar
  • One cup light soy sauce
  • 1/3 cup rice wine vinegar
  • 2 tablespoons of sesame oil
  • 6 cloves chopped garlic
  • large knob of ginger grated

Directions

Pour the marinade over the ribs in a large freezer bag and let soak up the goodness for at least 24 hours if not three days.

With a really hot grill cook them until they are caramelized finish with some sliced scallion.

To serve I cut into one bone portions and finish with some chopped scallions and sesame seeds.

NOTE: you can get regular short ribs and if you’re nice to your butcher ask him to cut them Asian style I’m sure he won’t mind.
