Kept the flavors classic but tried to update the look. It worked out just perfect and the toasted sesame nori on top worked out great for flavor and a little texture. What is amazing it that this was a little bigger than normal size serving but not much. perfect for a couple bits a person and a good healthy starter portion. But that was almost 1 pound of spinach that gets tightened into those 2 squares that are about an inch all around. Here is how you make this tasty hugely healthy Japanese starter.

Ingredients

  • 3/4 pound fresh spinach (10 0z bag)
  • 4 tbs. White sesame seed
  • 2 tbs. Sugar (use more or less to taste)
  • 2 tablespoons miram or Sake
  • 2 1/2 tbs. Kikkoman soy sauce

Directions

Remove stems, fill up sink with cool water, wash spinach well and pat dry. Bring a large pot of salted water to boiling.
Cook spinach for about one minute and plunge into an ice bath to stop the cooking and to preserve the nutrition and color.
Put the spinach in a paper towel and squeeze out excess water with fist. Chop coarsely, and set aside. Dry roast sesame seeds in dry frying pan over high heat for 60 seconds, moving pan continually in a circle while toasting. They should be a golden brown or you can buy them toasted already.
Grind seeds well while still warm. I use my food processor. Add sugar, soy, miram and grind until mixture is pasty.
Now in a bowl add a couple teaspoons of the dressing to the spinach and mix adjusting your amount to taste.
Plate in traditional way or make it a little more interesting by getting a piece of nori wet with a paper towel, sprinkling sesame seeds on top and using a blow torch dry it out until its crispy again and plate as I’ve shown you.
