Picked up these local head on shrimp, they are about 1 ½ inch long pretty small and some are female with the roe which I love. So I prepared these as I have eaten many times in Asia except I decided they needed a drink or Bourbon first….check it out, these guys are like crunchy fish fries. I like these little guys with the roe on them and the shell. It crisps up nice is crunchy and completely edible. You can remove the shell if you prefer but all of it is good to eat.

Ingredients

  • One pound of head on small shrimp
  • One cup Jack Daniels
  • 2 cups Rice Flour seasoned with kosher salt
  • Vegetable oil for frying

Dipping sauce:

  • ½ cup soy sauce
  • ½ cup rice wine vinegar
  • Sliced hot chili
  • Tablespoon of water. Blend together

Directions

Marinate the shrimp in Jack Daniel for a couple hours.

Now take out and drop into the rice flour make sure they are all coated. Now shake off excess and fry in 375 degree oil for about one min each side or deep fried for about one min.

Let drain and serve with the dipping sauce, these little firecracker are like peanuts you can’t just eat one and they are addictive and don’t forget to suck the brains out of the heads.
