Chicken Basil Lettuce Wraps

Servings
Ingredients
- one small onion chopped
- one large knob ginger chopped
- 2 cloves of garlic chopped
- one large chili chopped
- half a peeled apple chopped
- 3 kaffir lime leaves finely minced
- handfull of basil chopped roll like a cigar and chop once
- one large chicken breasts chopped
Sauce
- 3 tablespoons oyster sauce
- teaspoon fish sauce
- teaspoon rice wine vinegar
- teaspoon honey
- juice of half a lime
- sesame oil
- vegetable oil
- kosher salt and pepper
Condiments
- Bibb Lettuce to make your wraps
- fresh basil
- fresh sliced chili
- Special Sauce
- equal amounts or Saracha, soy sauce and rice wine vinegar
- spring onion
Directions
Once you have all your ingredients prepped and the sauce components ready you are going to work fast here.
Start with a ripping hot pan add a few tablespoon of vegetable oil and a few drops of sesame oil and when it’s smoking add the chicken and give the pan a shake right away. Now add a little kosher salt and pepper and start stir frying until the chicken is cooked about 2 min now transfer to a bowl.
Now add a little more vegetable and sesame oil and add when it’s smoking add all the other ingredients and let lay in the hot oil for about 15 seconds now start to stir fry tossing it around for about 90 sec. Now add the chicken back and stir fry until mixed together. Now add the lime leaves and all the sauce components and stir fry some more until everything is coated and keep stir frying until the sauce starts to reduce and tighten up around the ingredients about 2 min tops you can tell as there will be nothing on the bottom of the pan its all apart of the ingredients now. Finally toss in the fresh basil.
Transfer to a plate and garnish with some spring onion and more fresh chilies if you want more heat and special sauce for added flavor kick (not that its not already going to kick your flavor ass!)
To assemble take one of the Bibb lettuce leaves put some of the chicken in, add a piece of scallion and some sauce and go to town!
