Inspired by my friend Rhianna Featherstone to re-create something she had at a restaurant in Canada I used to go to as a kid when I was in Canada the “White Spot” which I loved for their boysenberry pie and triple O burgers. So she said they had an apple filling in crispy Won Ton so I had made some amazing blueberry compote so I thought let’s see what I can do and here it is. Hope you like it dear it tasted divine.

Blueberry Won Ton Pie

Ingredients

  • Egg roll wrappers
  • Canola oil for frying
  • Confection sugar for dusting
  • Vanilla Ice Cream
  • Basil leaves for a little green and goes great with the ice cream

Blueberry compote:

  • fresh blueberries
  • simple syrup

Directions

Take one egg roll wrapper and put a tablespoon plus a little more of your favorite fruit compote in the middle.
Now fold it as I have shown you in the photos. Now carefully fry in 375 degree canola oil until golden brown and crispy.
Drain on a paper towel then dust with confection sugar.

To plate I cut it in two halfs, added a little vanilla ice cream, drizzled some of the blueberry compote on the ice cream and the plate and finish with a little basil.
