Summer almost here so I’m busting out the lighter fare although don’t think there won’t be a steak kicking around here and there. But we will do our best not to weigh our bodies down with too much sodium and fat but we will make sure the food is amazing and delicious. I will never compromise fat for flavor but everything in moderation. Anyhow this one takes 20 min to make its asparagus season so take advantage of cheaper price but more importantly it’s in season and your body knows the difference. Now take note I made some basin cream for it which you can leave out no problem. The ingredients list is very small which is the way it should be and no cream!

Asparagus Soup

Ingredients

  • 1/2 cup One large bunch Fresh asparagus
  • One shallot
  • One cup Light chicken stock
  • Kosher salt
  • Goat cheese
  • Good finishing olive oil

Basil cream:

  • 1 cup fresh basil
  • ½ cup cream. Blend in food processor

Directions

Take the asparagus and shallots and either grill them on the BBQ until starting to char a little or roast them in the oven. Make sure you put a healthy dose of olive oil and kosher salt on them. While its grilling heat some light chicken stock up, get a blender ready.

When the asparagus is done pull it off and put it and the shallot in the blender and add the warm chicken stock. Now blend for at least one min then taste. Adjust seasoning and blend for another 30 seconds. Return this to a pot and simmer adding or reducing with water until you have a nice silky consistency. Your soup is ready, as an option you can put some goat cheese in the bottom of the bowl like I have pour the soup over it and finish with a poached quail egg, some basil cream and a drizzle of good finishing olive oil. That’s it Healthy and amazing taste, and remember you can leave out everything and just use a drizzle of olive oil to finish if you want to keep it simple.
