Ingredients
- Sawed femur bones from a cow
- Sea salt
- Crostini bread
- Salad of capers
- lemon juice
- Assortment of pickles
Directions
Put the bones in a 375 degree oven until you start to see the marrow bubbling and you can stick a skewer in half way and feel it go in with no resistance. Don’t overcook or they will render to nothing and undercook you will have a pink center…not so nice.
To eat, take some of the gelatinous marrow out, put on toasted bread , put some sea salt on the marrow and put some of that briny lemon salad on top and eat! Almost the best taste in the world.
