This is just about the most unctuous salmon dish I know. I make this for a snack believe it or not. It’s all about the quality of the salmon and simple execution. Important to remember when it comes to the Jalapenos, test the heat of them and use thinner slices or just put them in the sauce if they are too hot or you don’t like too much spice. Ok here is how we put this together.

Ingredients

  • Good Salmon Belly
  • Fresh Jalapeno pepper
  • Finley grated garlic
  • Fresh cilantro

Sauce:

  • Japanese Yuzu
  • Light soy sauce

Directions

Mix 8 tablespoons Yuzu with 4 tablespoons soy sauce and set aside

Method:
Thinly slice the salmon belly so it’s about ¼ inch thick
Lay the salmon on a fire proof surface and with either a brule torch and lightly sear one side of the salmon until the flesh turns slightly white. What this does is melt that amazing fat in the salmon. If you don’t want to use a blow torch then a quick sear on one side about 10-15 seconds.

Now curl the salmon as seen in the picture and line up in a row. Place a tiny bit of the grated garlic on each piece followed by one cilantro leave and finally the jalapeno pepper slice. Now sauce the plate and enjoy…this is just a flavor explosion that will blow your taste buds away and it is very healthy for you as an added bonus!
