Ingredients
- 2 pounds Chicken drumettes
- Tablespoon unsalted butter and one cup favorite hot sauce
Blue Cheese Dressing:
- ¼ cup light Sour Cream
- 1/4 cup favorite blue cheese
- ¼ cup mayo
- Juice of half a lemon
- One garlic clove
- Teaspoon of sugar
- Teaspoon rice wine vinegar. Combine all ingredients and blend until smooth
- *-Finley chopped chives
- *-Canola or vegetable oil for frying
Directions
Start with your favorite hot sauce or wing sauce I use Franks I like it but you can use anyone you prefer. Try and get one that is only peppers, vinegar and spices. Sometimes the sauce can be as bad as the takeout kind so that’s why I like Frank’s besides the flavor. Oh and don’t try and make this yourself unless you have a few days to prepare just buy your favorite sauce.
First make the cheese sauce and set aside in the fridge until ready. Now preheat a small fryer like the one I use to 375 degrees with vegetable oil. If you are using a regular pot get a thermometer that will read 375degrees as the temperature is critical in the cooking. Now cook the drumettes in batches making sure not to crowd them in the pot or the fryer. Fry them between 11 min and 15 min depending on the size of your wings. Mine were small so I did 11 min. Once a batch is done drain it on paper towel and put in on a rack in the oven at 220degrees. While your frying the wings get a sauce pot out and pour your bottle of hot sauce in there and add a tablespoon of unsalted butter. Heat until butter has melted and incorporated into the hot sauce. When all the wings are done take a large bowl put the wings in and pour the sauce over them and toss until they are all evenly coated.
Now it’s time to plate. I like to put everything on the wing so add the cheese sauce so it’s one nice bit no one is double dipping you just pick up the wing and its one perfect bit. Add the chives and EAT!
