- Kobe beef
- Sushi grade tuna
- Kim chi
- Miso paste
- Fresh orange
- Fresh ginger
- Rice wine vinegar
- Vegetable oil
- Kosher salt
- Pepper
- Beurre blanc sauce
Directions
First let’s make the sauce that will paint the plate, combine one teaspoon of miso paste, one teaspoon of rice wine vinegar, ½ teaspoon of grated fresh ginger, juice of ½ an orange and one teaspoon of water and either muddle it in a motor and pestle of you can blend it. Set that aside for now.
We need to make a standard beurre blanc sauce and keep it warm in a hot water bath until you’re ready to plate.
In a sauce pan combine the shallots, wine and vinegar and cook until the liquid reduces to almost a syrup. Add the cream start to whisk, now add a pat at a time very cold butter and continue to whisk until it all melts into the cream. It will reduce a little and when it coats the back of your spoon nicely it is ready. Don’t keep this on the heat put it in a bowl and have that bowl sit in some warm water this way it will keep nice and not split, make sure to give it a stir very few min.
Ok continuing, trim your tuna and your Kobe beef so they are roughly the same size about 2 ½ OZ each now with a hot pan about medium high put some neutral oil in like peanut, vegetable or grape seed oil and let get hot. Season the Kobe beef and the Tuna with Kosher Salt and Pepper. Sear each piece for one min on each side one after another immediately now do the same to the Kobe beef and get ready to plate.
Now take the miso sauce we made earlier and paint a nice portion of the plate with it.
Rest the Kobo on it and rest the tuna on the Kobe beef.
Plate a small amount of the Kim Chi at one end of the plate and if you have a small dish you can put the beurre blanc in it and add it to the plate as I have in the picture or you can just drizzle a nice amount on the Kobo beef.
Add some radish sprouts or chives and serve.
The ginger miso sauce just lifts the flavors of already beautiful tuna and beef to a new level and like I said…. If this is date # 1 ….well hey
