Here is a little starter that is just so luscious and perfect for a gathering of friends over some good wine. You start with some Italian or Spanish cured ham. If you have a deli quality meat slicer at home slice it very thin paper thin, if not have your deli person do it for and tell them as thin as they can slice it. For the egg I use free range organic eggs, they are worth the extra few cents. Happy chickens produce happy eggs. I tell you how to make the perfect warm egg to follow. Finally I server it with some Spanish tomato bread……this starter or tapas beats those frozen mini quiches’ you get at the supermarket!

Ingredients

  • One egg per person
  • Good rustic bread
  • Extra virgin olive oil
  • Good cured ham
  • Kosher salt

Tomato Bread:

  • Toast some good rustic bread
  • tomato
  • touch of kosher salt

Directions

Perfect soft egg:
The best way to make easy-to-peel hard-boiled or soft eggs with pure yellow centers is to place the eggs in a pot of cold water and add a teaspoon of salt. Place the pot on the stove and bring to a boil. Cover the pot and remove from heat and let sit for 13 minutes. Drain the eggs and immediately place in an ice bath until completely cooled or in the ice bath for 15 min to serve it with a soft yolk.

Tomato Bread:
Toast some good rustic bread, now take a tomato and cut the top off and run the tomato flesh on the bread until you see the tomato on the bread. Add a little touch of kosher salt.

Plate it all so it looks sexy and break the yolk if you want. The eggs, cured ham and tomato bread is such an amazing combination that you will find in some Italian and Spanish bars.
