From the “holy crap can anyone do something with squid besides deep fry it files” I give you the stuffed squid stuffed with squid and onions. Now I know this may look strange to people in north American but over in Europe this is the way it’s done and in Spain this is in a lot of Tapas bars. I love it, think it’s gorgeous and tastes out of this world. Let’s give this a try shall we?

Ingredients

  • Cleaned squid tubes and tentacles
  • 2 large chopped onions
  • 2 cloves of garlic
  • Splash of apple cider vinegar
  • Kosher salt
  • Splash of white wine

Directions

First clean the squid pull out the plastic like tendon and all the innards, now by the tail there is a little piece of meat like a fin pull on that and the outer dark skin will begin to peel off. Rinse the tube finish the remaining and set aside. Now for the tentacles you want to cut them just below the eyes and discard that part with the eye. Now you have cleaned squid and we are ready.

Now this part will take some patience, rough chop the onion and add to a low heat pan with some good olive oil, splash of apple cider vinegar kosher salt. Now take one tube of the squid along with the tentacles and chop them up and add them to the onions. Now slowly cook the onions until they are caramelized like a jam . Now when that is done you’re going to take that mixture and stuff it into the squid tubes. Now in the same pan you cooked the onions add a little more olive oil and now grill the tubes of squid until they are nicely browned on all sides. Now take them out and add a splash of white wine to the pan, let it reduce a little and serve this over the stuffed squid.

Amazing flavor and so beautiful, this is perfect tapas and a fantastic way to celebrate Spain. This one is good at room temp as well so good for drinking and talking .
