Smoked Salmon Soba

Ingredients
- One bundle Japanese Soba Noodles
- One chopped spring onion
- Handful chopped cilantro
- Toasted sesame seeds
- 3 oz smoked salmon in nice bite size strips
- One small chopped chili
Dressing:
- 4 tablespoons soy sauce
- Juice of half a lime
- 1 teaspoon of honey
- Dash of chili sesame oil. Combine all ingredients and set aside.
Directions
Cook the noodles according to the package appox 2 min usually is salted boiling water.
When done take out and rinse under cold water, and while your rinsing them use your hand to lift and separate the noodles like your cleaning them. This will make sure all the other starch is off and they become nicely firm and don’t stick together while cooling them off.
Now in a bowl combine the noodles, onions, cilantro, salmon and sesame seeds and pour the dressing over and carefully toss until all the noodles are coated with the dressing and the ingredients have been distributed evenly. Finish with some cilantro leaves and another sprinkle of sesame seeds and enjoy!
