Talk about Salmon porn this is it…….both in presentation and flavor! I love miso when it gets a little burnt on as you can see.. its rich, sweet , salty a little chew to it. And that salmon is so lush and moist on the inside just like eating cake! This one is easy this one will flood your head with all kinds of emotions when you eat this one.

Ingredients

  • Good salmon filets, the fattier the salmon the better.
  • Scallions chopped

Miso glaze:

  • 2 tablespoons light miso paste
  • 3 tablespoons dark brown sugar
  • 2 tablespoons miram
  • One chopped glove of garlic
  • Tablespoon light soy sauce
  • ½ teaspoon sesame oil. Combine all ingredients in a small pot and bring to a light boil stirring until slightly reduced. Check for taste and adjust more sweet, more salt etc.
  • one cup fresh squeezed orange juice bottled will also work fine

Take the salmon and depending on the thickness score some cuts into the flesh.
This allows the miso to get in there and give you more flavor and texture.

Cover the entire piece of salmon with the glaze and don’t be shy put a lot on. Now hit it in a 375 degree oven for about 15-20 min depending on the size of your filet. When its just about done crank the oven to broil. It’s ready when the miso starts to burn a little, take out and let it rest for 10 min at least.
Finish with some chopped scallion and go to town on this beautiful dish.

It is so luscious with the hint of orange and saltiness of the miso it’s just perfect.
