Here is a perfect side dish that takes the usual steamed or god forbid boiled asparagus to another level of richness. Simple and amazing.

Ingredients

  • 2 pounds Fresh asparagus
  • few Thyme sprigs
  • Olive oil
  • knob Unsalted butter
  • Lemon zest
  • kosher salt

Directions

Start by breaking the stems off the bottom of the asparagus. take one and bend it where it break is where you should cut the rest. If the asparagus are thick you will want to peel the skin off at the bottom so they will be tender and not have that woody outside. Just use a potato peeler and be gentle.

Now put some olive oil in a pan, add some kosher salt and some fresh thyme sprigs. and toss the asparagus in it. Roast at 375 degrees for about 7-12 min depending on the size of the asparagus it should be a little tender at the thickest part.. For the last 2 min add a knob of butter and baste then return to the oven to finish. When done add a little lemon zest to the top.
