Ingredients
- One pound fresh calamari tubes cleaned
- Can of tomato paste
- Splash of white wine
- Tablespoon of sharacha sauce
- Small handful of dried chilies
- Grated parmesan cheese to finish
Directions
Cut your calamari tubes into long strips lengthwise about the thickness of fettuccini.
Now hot pan olive oil toss in the calamari and watch them shrivel into little pasta looking twirls.
Add some kosher salt and the white wine, once wine has reduced add the rest of the ingredients and let reduce until almost dry and you can hear the calamari noodles starting to pop and get a little char on them.
The sauce should be one with the calamari.
Now just plate you can get fancy using a mold or just on a plate with some grated parmesan cheese and you are done – fantastic rich rustic taste and really beautiful as well.
