Roasted Salmon with Tomatos and Capers

Ingredients
- Salmon filet 4-6 oz per person
- 1 ½ cups mixed cherry tomatoes or any other tomato chopped
- Tablespoon of capers with brine
- Splash of dry white wine
- Kosher salt
- one cup roasted peppers
- Olive oil
Directions
Put some olive oil in the bottom of a pan, add the salmon filet, place the tomatoes, roasted peppers and capers around, add a splash of white and season with kosher salt.
Cover with foil and into a 350 oven for about 20-30 min until tomatoes have split, turn up heat to 400 degrees for last five min cook uncovered until the liquid has become a thick sauce. This recipe can be made for any portion of salmon so you can use an entire side of salmon just increase the tomatoes and other ingredients so it will be in proportion to the size of the filet.
Plate and finish with some grated parmesan cheese.
