I just love this one late at night it’s the perfect If you have had a little too much wine and need something to eat that is healthy and will stop you from microwaving those Hot Pockets (what the hell are you supposed to do with them anyhow, rub them on your face?) Anyhow pick up a good quality package of whole wheat soba noodle as they are much better for you and you get some fiber. This dish takes about 15 min to make which is about the time a hot pocket takes in a toaster oven. This should serve 2 portions.

Ingredients

  • One serving of buckwheat soba noodles

Shrimp:

  • boil them in salted water for about one 60-90 seconds. Take out and put in ice bath to stop cooking. They will be really nice and tender not rubber bullets.

Spicy Peanut Dressing:

  • Tablespoon crunchy peanut butter
  • 3 tablespoon of soy sauce
  • Tablespoon of rice wine vinegar
  • Teaspoon of Saracha sauce
  • Teaspoon sesame oil
  • 1 tablespoon brown sugar
  • Half a clove of garlic grated
  • Teaspoon grated ginger.
  • Toasted sesame seeds

Garnish

  • Few leafs of coriander for garnish chopped
  • One scallion chopped for garnish

Directions

Make the dressing combine all the ingredients and adjust for taste set aside better if made 20 min ahead.

One serving of buckwheat soba noodles (usually has a paper band around one serving) cooked in non salted water to package direction. Drain and cool in an ice bath to stop cooking and chill then set aside.

Boil your shrimp in salted water for about one 60-90 seconds. Take out and put in ice bath to stop cooking. They will be really nice and tender not rubber bullets. Cut your shrimp into small pieces.

Place your chilled noodles in a bowl, add your chopped scallion, shrimp and coriander and a couple tablespoons of the dressing and using tongs toss it all together. Finish with some sesame seeds.

I always drizzle some extra chili oil on mine for extra heat but this should have plenty of kick.
