This dip is a different flavor from the usual salsa and whatever that 7 layer bean bomb people make. This dip just works on so many levels you just need to try it to understand.

Ingredients

  • Simple Tomato Sauce fresh tomatos, salt, garlic, basil and chilies
  • Manchego Cheese or any other good strong flavored cheese
  • fresh thin sliced jalapenos
  • chili powder
  • fresh limes

Chick Pea Mix

  • can of chick peas rinsed
  • 1/2 cup crumbled feta cheese
  • 2 fresh chilies chopped
  • 2 cloves of garlic minced
  • juice of one lime
  • 3 tablespoons olive oil
  • handfull of chopped cilantro

Directions

Start by making the chick pea mix. All ingredients into a bowl mix well and let sit for an hour if not overnight.

Take a shallow dish and put a layer of the chick peas on the bottom make sure its an even layer. Now cover it in your simple tomato sauce evenly and just enough to cover the chick peas.

Now shred your Manchego cheese on top, again everything the same evenness and right to the edges. Sprinkle some spicy chili powder on the cheese and into a 450degree oven until the cheese is bubbling all around.

Take out and lay some of the finely sliced Jalapenos on top. They will wilt nicely and help add flavor. Finish with some crispy chips and thin slices of lime.
