Ingredients
- one shallot finely chopped
- one mango finely chopped
- 2 cups fresh cilantro rough chopped
- juice of one lime
- one chilie finely chopped
- one cob of corn charred you can use cooked corn of any kind
- olive oil
- kosher salt to taste
- one cup of chopped pineapple
Directions
Take care of the only cooking component the corn if you have a BBQ stick one cob on and get it fairly cooked where its starting to char a little. If you don’t have a BBQ a boiled ear of corn will work just fine. Once cooked take a knife and remove all the kernels into a bowl.
The rest here is now assembly only, take all your ingredients and into the bowl with the corn. Add the juice of one lime, a little glug of Olive oil and mix. Give it a taste and add what you prefer, a little salt, more lime juice, more olive oil its really up to you. Mix well and you have a great salsa for anything of your favorite summer grilling proteins.
